A new little trip to the USA?
Thing made with this pie recipe, a culinary specialty of Florida, called "Key Lime Pie", in other words, lime pie from the Keys (archipelago of South Florida).
I tasted it during a trip to Florida, in these typical “diners”, these American restaurants where you are served burgers and pies at any time of the day. It was a pure delight!
It will remind you in some ways of lemon meringue pie, but this “Key Lime Pie” is definitely more melting and, I find, less sweet than the first one.
Here in a few points, the stages of its preparation:
- 250g of digestive biscuits (English dry cakes)
- 1 box of sweetened condensed milk (400g)
- 3 egg yolks
- 5 limes for the juice + 1 for the decoration
- 120g of butter
For the whipped cream: 20cl of whole liquid cream + 1 tbsp of icing sugar
Preheat the oven to 180 ° C.
Mix the cookies in a food processor and mix them with the previously melted butter. Mix well to obtain a homogeneous paste. Pour this dough on the bottom of a pie dish, pressing well with the back of a tablespoon.
Bake this dough for 10 minutes, then let cool.
Meanwhile, mix the sweetened condensed milk with the egg yolks until you get a smooth consistency. Add the lemon juice and mix well.
Pour this mixture over the tart base, and bake for 15 minutes at 160 ° C.
Let cool and refrigerate.
To prepare the whipped cream, I used a siphon in which I poured the liquid cream mixed with the icing sugar.
Decorate each piece of pie with a touch of whipped cream and a slice of lime.
