What happiness this month of May, we tame the first rays of the sun, we take advantage of the arrival of the fruits that we love, and strawberries are part of it… As for the recipe, I still believe that the simplest things are often the best, so what better than an unpretentious pie, a Rustic strawberry pie to enjoy as is or with a scoop of vanilla ice cream.
So I bet on a rustic pie! I must admit something to you: my favorite part is precisely this folding of the dough on the fruits, I love making rustic pies just for that. The raw and terribly aesthetic side of the rustic pie I'm really a fan of it. And she's really hyper photogenic, don't you think?
For this pie, I modified my usual recipe a bit by using semi-wholemeal flour and I don't regret at all, the dough tastes better.
On the strawberry side, I carefully cut them into slices before placing them on the pie shell, but ultimately I think that simply cutting them in half would have been perfect!
Well, I don't know about you, but I really love the color of cooked strawberries, a red tending to raspberries, full of gluttony… Like what, the power of fruit! ;)

Rustic strawberry pie
Ingredients:
- 250 g semi-whole wheat flour
- 60 g brown sugar
- 1 pinch of salt
- 160 g cold soft butter
- 75 ml cold water
- +
- 500 g strawberries
- 75 g almond meal
- +
- 30 g brown sugar
- 2 cs water
Instructions:
- Start by preparing the sweet dough. In a container, mix the dry ingredients (flour, sugar, salt). Add the diced butter then sand the dough with your fingers to obtain a crumble-like dough. Finish by pouring in cold water, mix, form a ball and place in the refrigerator for 30 minutes.
- Preheat the oven to 180 ° traditional heat.
- Roll out the dough with a rolling pin on a floured work surface. In the center place the almond powder in a circle. Remember to leave about 4cm all around to fold up afterwards.
- Cut the strawberries (slices or halves) and place them on the ground almonds.
- Fold the dough over the strawberries, brush the edge of the dough with syrup (sugar and water) and bake for about 40 minutes. Let cool on the rack.
