Ingredients:
320gpitted medjool dates
145ggrated coconut
100galmonds with their skin
3,5csbitter cocoa
Preparation:
In the bowl of the mixer / blender, pour the pitted Medjool dates, almonds and 95g grated coconut (keep the rest for decoration).
Mix high speed for a few moments, the mixture must first be finely chopped. Scrape the edges then restart the mix.
Add the bitter cocoa then mix again until you obtain a slightly sticky dough. If after several minutes the dough has trouble amalgamating (it depends on your dates) add 1 tbsp of water.
Pour the dough formed into a container. Pour the remaining coconut onto a plate. With your hands, take the dough and form about 20 balls by rolling them in the palm of your hand.
Then roll the balls in the grated coconut and place on a baking sheet. Refrigerate 15 minutes to firm them, before tasting.
Notes:
These energy balls can be kept for up to 3 weeks in the refrigerator in an airtight container.
