Eskimos Strawberry, Yogurt & Mango Sorbet

That's it, summer is definitely here!

A good excuse to get back to making good homemade ice cream or sorbets.

This time, they take the form of pretty individual multicolored Eskimos, filled with good things: strawberry, mango and whole milk yogurt with a touch of honey for the sweetness :-)

These strawberry, yogurt & mango sorbet eskimos are very refreshing, perfect to enjoy in the afternoon under the sun ...

 

Recipe (x12 Eskimos)

- In a container, pour the equivalent of 3 Greek yogurts (420g) and add about 3 tablespoons of brown sugar (more or less according to your taste ...), mix well so that the sugar crystals can dissolve completely.

- In a blender, mix 250g of strawberries with 1 tablespoon of honey. Set aside the resulting coulis.

- Do the same with 250g of mangoes (fresh or frozen), adding 1 tablespoon of honey and 100ml of apple juice. Put aside.

- Start filling your Eskimo mold, always following the same order: 2 teaspoons of strawberries, 1 teaspoon of yogurt, 2 teaspoons of mango, 1 teaspoon of yogurt and repeat until complete.

- To create a marbled effect, quickly run the tip of a knife on the wall of each mold from bottom to top.

- Insert the wooden sticks and let set for at least 6 hours.

      Hello, so that's a very good question! I would say several months if the freezer temperature doesn't change. I'm not an expert on this… I usually eat them quite quickly! @ soon

    Thank you for this superb recipe, refreshing by this beautiful summer !!
    I would just try to replace the brown sugar with honey or agave syrup ...
    Making ice cream knowing all the ingredients are in it is great!
    Where did you find your Eskimo mussels?
