All of this coconut chocolate rocks it's an explosion of flavors on the palate… We love their ultra soft texture in the great taste of coconut ! For an additional touch of gluttony, add a small dose of melted dark chocolate after cooking. It is well known, coconut and chocolate work perfectly!

How to make coconut chocolate rocks?

This recipe is really very simple! Besides, you will love to make it with your family, the children will love to knead the dough. You need a saucepan to pour into all the ingredients (except chocolate). Heat over low heat to allow the whole to mix well.

Then prepare a baking sheet covered with parchment paper or silicone mat. Then we drop off small domes that we train with our fingers. Then all you have to do is put in the oven!

Once the coconut rocks have cooled, all you have to do is dip them (just the bottom) in previously melted chocolate. We let the chocolate freeze a little before tasting them ...

In this recipe, it is important to gently heat the mixture at first. These are indeed egg whites which will make it possible to create the binder with the grated coconut, and to have small rocks which hold well during cooking.

What I love is this very special taste of grated coconut when baked in the oven ... She roasts lightly, therefore, its aromas are even more pronounced, a real delight. I use finely grated coconut for this: I find that the rendering in terms of texture is optimal.

How to preserve coconut rocks?

These coconut chocolate rocks keep very well at room temperature. But for that you have to put them in a airtight container, and place them away from heat and light. You can keep them for about 4/5 days. IMHO they'll be eaten by then!

Rochers Coco Chocolat, The Easy Recipe

The quick and delicious recipe with only 5 ingredients!

Ingredients:

  • 5 egg whites
  • 300 g powdered sugar
  • 300 g grated coconut
  • 2 tsp natural vanilla extract
  • 1 dark chocolate bar

Instructions:

  • Preheat the oven to 180 ° using traditional heat.
  • In a saucepan over low heat, combine the egg whites, coconut, sugar and vanilla for a few minutes. The mixture should blend well.
  • Leave to rest for 5 minutes then place small domes of dough on a baking sheet covered with baking paper. Model the pyramids with your fingers. Bake for about 18 minutes then leave to cool on a wire rack.
  • Melt the chocolate in a small container, immerse the coconut domes on 1 cm, scrape the underside and dry on baking paper.

Let cool before tasting :)
Keeps very well in an airtight box.

    Also tested these holidays but without chocolate because there was no more in the cupboards and impossible to buy more. But even without everyone loved it, I replaced the vanilla with vanilla sugar, I keep the recipe for the times when there are egg whites left;)

    Thank you for this very good recipe. It's not too sweet. I just had a little problem with the cooking because they were a little overcooked. About ten minutes are enough for my convection oven but that does not detract from the quality of the recipe! ☺️
